Q&A: Renowned Chef and Prime Cuts Host, David Bancroft

Prime Cuts host and award-winning chef David Bancroft is owner of the renowned Auburn-based Acre Restaurant and Bow & Arrow Barbecue. Sit in as Bancroft shares what life looks like when he’s not busy with his culinary ventures.

Backyard Life: Tell us a little about where you live, your family, and what you do for work that relates to your love of the outdoors and a backyard lifestyle?

David Bancroft: My wife Christin and I live in Auburn, Alabama with our son Walker (8) and daughter Kennedy (7). We also have two dogs: A rescue named Toodles and an English Cream Golden Retriever named Dolly. I’m an avid outdoorsman and enjoy taking my kids fishing at a nearby pond, whenever possible. My son Walker has recently become passionate about whitetail deer hunting and joins me in the woods whenever he can. Beyond the fact that he loves our homemade deer jerky, it’s a great opportunity for me to show him the respect and value that must be paid to any animal we’re fortunate enough to harvest.

I opened our first restaurant, Acre, in 2013, with a focus on farm-to-table Southern food. It sits on one acre of land in downtown Auburn, and has three onsite gardens. Our team enjoys spending time tending to them throughout the year, and then using the produce in our many dishes and specials.

Our other restaurant, Bow & Arrow, is a Texas smokehouse highlighting the cuisine of my childhood in San Antonio. In addition to a wide array of smoked meats such as brisket, turkey and sausage, we offer Southern sides, fresh tortillas, and a condiment bar with 12 different house-made sauces and toppings.

BL: What is unique or special about your property, or where you live?

DB: Auburn is a beautiful college town, and is in close proximity to Chewacla State Park. We have access to its walking and hiking trails, as well as a pond behind our house to catch small fish in.

BL: What role does food play in your backyard living?

DB: I’m not sure there’s anything more nostalgic than the smell of hamburgers and hot dogs on the grill, especially in the summer. It’s also been a way for us to connect with our new neighbors through casual conversations over the grill and picnic table while the kids have had the opportunity to play.

BL: What is special about Southern cooking?

DB: I grew up in San Antonio, but spent many summers on my grandparents’ farm in Hartford, Alabama. My Mama Jean was famous for her long family table set with reused Cool Whip tubs (if you know, you know!) filled with fried chicken and cornbread. Southern food is unpretentious, yet requires a certain level of skill that can only be taught by repetition and time spent in the kitchen. This includes things like how to properly use a cast iron skillet (and how to keep it seasoned), knowing how long to knead dough for Memaw’s chicken ‘n dumplings, when to stop beating the egg whites for your chocolate pie meringue, and when you have just the right amount of sugar in your sweet tea.

BL: Can you describe your outdoor grill, patio (outdoor kitchen) set up for us?

DB: We have a fairly large backyard with outdoor seating, a Big Green Egg and a barrel smoker.

BL: Do you have any tips for creating/hosting a successful outdoor dinner gathering?

DB: For starters, check the weather! We love to entertain and have hosted many events at our home since we moved here in April 2018. We always make sure the patio is swept off, a citronella candle is lit, and there’s adequate seating for everyone. Access to beverages is also important, so we usually keep a cooler handy outside. Lastly, we always have some music—or ESPN!—playing in the background.

BL: Describe your perfect backyard afternoon?

DB: My favorite backyard afternoons have been spent with some steaks on the grill, a glass of Cab with my wife, and our kids running through the sprinkler and playing with the dogs.

BL: What’s your favorite meal to throw on the grill? And, are you willing to share the recipe?

DB: My go-to grill grub has to be ribs! I’ll be glad to share my recipe for the ribs I made on Iron Chef Showdown back in 2017. They must’ve been good because I won my battle against Iron Chef Jose Garces!

Q&A: Outdoor Cooking Aficionado and Ballistic BBQ Founder, Greg Mrvich

BBQ author and YouTube personality, Greg Mrvich is widely regarded as one of America’s top barbecue aficionados. And, for good reason. Notably, his YouTube channel Ballistic BBQ has garnered 300,000 subscribers and a whopping 43 million views. Here, he shares how a guy from California learned the art of southern cooking and, in particular, BBQ.

Backyard Life: Tell us a little about where you live, your family and what you do for work that relates to your love of the outdoors and a backyard lifestyle?

Greg Mrvich: I live in San Diego, CA with my wife Karen and son Garrett. Recently, I retired from the San Diego Police Department and outdoor cooking has always provided a great way to relax and destress. In addition to providing a means of enjoying the outdoors, it’s enabled me to provide my family and friends with healthy, great-tasting food.

BL: What is unique or special about your property or where you live?

GM: Our home is situated on a hill, which allowed us to create a teared, two-level backyard space. It’s complete with a large deck, dedicated cooking area and lots of tropical plants like plumeria, banana and mango trees.

BL: What role does your backyard play in your lifestyle?

GM: It plays a huge role. For instance, I start each day relaxing with a nice cup of coffee on my back deck. And, I often end each day cooking dinner in my backyard.

BL: Can you describe your outdoor kitchen set-up for us?

GM: Ah yes, my “happy place!” It consists of a basic kettle charcoal and ceramic Kamado-brand grill, as well as a pellet cooker and large offset-vertical smoker.

BL: What role does BBQ-ing play in your family’s backyard life?

GM: A critical part, as the design and layout of our entire backyard space is built and designed around it.

BL: Has growing up in California either affected or influenced your love of BBQ?

GM: My grandparents were from Missouri, which is where I gained my love for southern cooking—including BBQ. Living in southern California has given me year-round cooking opportunities. When pitmasters in certain areas of the country might be buried in snow, I’m grilling and smoking!

BL: What is the backyard improvement or addition project that you are most proud of?

GM: I would have to say my deck. I improved it to span an existing dirt embankment, which helped us transform unusable space into a nice sitting area.

BL: Can you provide any tips for creating/hosting a successful outdoor gathering like a BBQ party?

GM: I get a lot of questions regarding timing traditional “low-and-slow” cooks like beef brisket and pork shoulder. Since these types of cooks generally take 5 to 9 hours, I always suggest aiming to finish them 2 to 3 hours prior to when you’d like to serve your guests. Once these large cuts of meat are finished cooking, simply wrap them tightly in foil, cover them with a couple of towels and place them in a cooler. Doing so will allow them to stay warm for 4 to 5 hours. That way, you won’t need to stress about your guests having to wait for the food to finish cooking.

BL: Describe your perfect afternoon in the backyard?

GM: Simple: 73º and slightly breezy, a cold beverage in hand and the smell of hickory in the air!

BL: What’s your “secret sauce,” so to speak, when it comes to successful grilling?

GM: Always have an area, or zone, of your grill that’s cooler in temperature where you can move the meat to if/when it gets too hot or is ready to serve.

BL: Any tips for folks who might be new to the ‘cue?

GM: Take advantage of all the information that’s available on websites like YouTube [such as Mrvich’s Ballistic BBQ]. It’s a never-ending source and is priceless.

BL: What is your favorite cut of meat to throw on the grill?

GM: Beef tri tip roast, seasoned with a blend of kosher salt, ground black pepper, granulated garlic and dried parsley.

BL: Sounds delicious! Are you willing to share the recipe?

GM: The seasoning blend is easy: 1/4 cup of salt, 1/4 cup of pepper, 1/4 cup of dehydrated minced garlic and 1 tablespoon of parsley.

Next, rub the tri tip down with a nice coating of Worcestershire sauce. Then season it liberally and allow it to “sweat” about 30 minutes at room temperature.
 
After that, cook the tri tip using indirect heat (or a smoker) at 250ºF until the internal temperature of the meat reaches 125ºF. Once this target temperature is met, pull it off of the cooker and allow it to rest while preparing the cooker for direct-heat grilling. Once the cooker is very hot, simply sear each side of the tri tip about one minute per side.

Q&A: Landscape Industry Veteran and Professional Bass Angling Phenom, Brian Latimer

B.A.S.S. pro fishing phenom Brian Latimer knows fishing. And, having grown up in his family’s landscape contracting business, Latimer also knows landscaping. So much so, that Latimer used his hands-on know-how to customize his own backyard.

Backyard Life: Tell us a little about yourself—where you live, family, what you do for work that relates to your love of being outdoors or prioritizing a backyard lifestyle?

Brian Latimer: (BLat) My wife, three children and I live in Belton, SC. As a professional bass angler who grew up in a family landscape business, we’re obsessed with the outdoor lifestyle. Any spare time we have is spent riding motorcycles, fishing and doing yard/property beautification projects.

BL: What’s unique or special about your property or where you live?

BLat: Our one-acre, rural South Carolina residential property, includes both a custom backyard motocross track, as well as a boat house where I prepare for all of my fishing competitions and film and video productions for both my social channels and the leading industry brands I represent.

BL: Do you have any distinguished areas in your backyard? Favorite spaces?

BLat: Our backyard motorcross track is an absolute playground! It’s filled with jumps, whoops, and, of course, tractors and other machinery needed to maintain and improve it.

BL: How does where you live support your love for a backyard/outdoor lifestyle?

BLat: Living in a rural setting is important for us, since it provides the necessary space to accommodate all of our toys!

BL: What is the trickiest thing about maintaining your backyard/property?

BLat: The hardest thing about maintaining a nice property is the work that’s involved in keeping it looking neat and clean, while, at the same time, serving a specific purpose.

BL: How did growing up working for the family landscaping business shape who you are as a person?

BLat: My family’s landscape business taught me how to fix things, how to be my own man and how to be a leader. Without the experiences I had working at an early age, I would be at an extreme disadvantage in my career as a professional bass angler.

BL: And, how did it influence the way you’ve developed your own backyard?

BLat: Honestly, I think my need to escape from the professional world has influenced my yard more than anything. I’d much rather have a property with purpose than one that’s only for looks. I always made it my mission when designing spaces as a landscaper to consider a customer’s real needs, hobbies and lifestyle.

BL: Any key landscaping tips or tricks you’d like to share?

BLat: Every homeowner needs to be realistic, as often times they’re too busy to set landscaping expectations that are truly thought-out or attainable. For a particular landscape to be successful, it must function as a time asset, not a time liability. The truth is, very few of us enjoy trimming shrubs and mowing lawns. However, we love to enjoy the fruits of a well-maintained property. The only way to fix this issue is through simplicity and function. Where today’s landscapes are concerned, less is more.

BL: What is the backyard improvement/addition you’re most proud of?

BLat: My most treasured addition is our boat house. With no background in construction, I built it myself. This project took 18 months to complete. So, needless to say, I haven’t started another one since!

BL: Can you fish or hunt on your property? Or nearby?

BLat: Unfortunately, we can’t. But, my kids and I do have ready access to fishing opportunities that are close enough to take a hike or short drive to.

BL: Describe your perfect backyard afternoon (or way to spend time in your backyard)?

BLat: Working on tackle in the boat house while my son and his friends rip up the backyard motocross track on their dirt bikes. It just doesn’t get any better than that!

BL: What’s your favorite meal to throw on the grill?

BLat Without a doubt, fresh sea trout and redfish, accompanied by broccoli and rice.

Q&A: Gardening Guru and Growing a Greener World Host, Joe Lamp’l

Joe Lamp’l, (aka joe gardener®), has been hooked on horticulture since childhood. So, it’s no surprise he is now one of the country’s most trusted category experts and recognized personalities, in gardening and sustainability. Here he talks about his favorite garden.

Backyard Life: Tell us about yourself: Where you live, your family, pets and what backyard life looks like.

Joe Lamp’l: My wife and I live on a suburban Atlanta five-acre farm, complete with a classic red barn, horses, chickens, goats and rabbits, the standard barn cats, and my beautiful organic raised-bed vegetable garden. As Dorothy said, “There’s no place like home!”

BL: What is unique or special about your property or where you live?

JL: When I’m home, I feel like I’m in the country, away from it all, which I love. But, when I need to get my Starbucks or make a Costco run, I’m only five minutes away. Living within the bustling metro area of Atlanta, I feel like I have the best of both worlds!

BL: What role does your backyard play in contributing to your lifestyle?

JL: My backyard IS my lifestyle. I’m much happier outside than in, and my garden and yard are my happy place. Any chance I have to connect with nature is an opportunity I don’t pass up. Creating that space in my backyard is heaven on earth. There’s no place that makes me happier!

BL: What is your favorite part of your garden?

JL: My 16 large, raised-bed vegetable garden is my pride and joy. It’s where I go to decompress, get inspired and stay amazed at just how awesome nature is. And, how fortunate I am to be able to have such a garden out my back door. It’s where I go to learn something new every day. And, it’s where I get to grow organic vegetables for my family and me. The best part: it’s bountiful enough that we have plenty to share with friends, neighbors and those in need.

BL: Could you describe briefly what you enjoy most about your garden or backyard from season to season?

JL: The changing season and diversity that comes with each is why I love getting outside as often as I can. It’s never boring and no two seasons—or days, for that matter—are the same. I never have to look far to discover something new. Every day is like that, and the changing seasons only enhance that experience.

BL: What is the key tip you give to people where creating a garden space they love is concerned?

JL: Just start. Don’t wait to start a garden until you think you have it figured out. Figure it out as you go! I’ve been gardening for decades now, and I’m still figuring it out, and I hope that never stops. The learning is the best part, and the best learning comes from doing, especially when you find those opportunities to learn from those experiences that didn’t quite work out as you planned. But the best part is, you at least got that far. A lot of people that want to create a garden never get around to it because they just don’t start. It’s such a missed opportunity for a life-changing experience.

BL: What is your favorite backyard improvement/project that you are most proud of?

JL: My raised-bed garden. For many years, I dreamed of having one. One day, I finally decided to make it happen. And, I did. While it wasn’t cheap, it’s paid for itself many times over in the joy I get, the opportunity to teach others from it, and, best of all, to grow enough food to share with so many who aren’t as fortunate. That alone makes it all worth it!

BL: Describe your perfect backyard afternoon (or way to spend time in your backyard)?

JL: I love a spring or fall afternoon in my garden the most. When the air is crisp, and the sky is bright. Walking the garden or landscape to see what’s new. And, discovering that there’s always something new. It makes me thankful to have such a place, and appreciate how amazing it is to be outside.

BL: What are your favorite foods to grow?

JL: I love growing tomatoes because they’re so challenging. You work so hard to get them to harvest. But, the reward of that fresh-from-the-garden, vine-ripe heirloom tomato. There’s NOTHING better!

BL: And, what are your favorite foods to throw on the BBQ?

JL: I love cooking seafood on the grill. I’m a big fish lover, but when you add that chargrilled flavor to a fresh piece of fish … Now, that’s a perfect combination!

Q&A: Legendary Bass Angler, Author and Outdoor Media Personality, Joe Thomas

Bass pro, Diary of a Bass Pro author and STIHL’s Reel in the Outdoors series host, Joe Thomas shares what backyard life on his 3-acre property near Cincinnati is like.

Backyard Life: Tell us about yourself, your family, where you live and how you support your outdoor/backyard lifestyle?

Joe Thomas: My wife, two daughters, and I live in a rural setting east of Cincinnati. While we’re fairly close to the city, we also border farmland which is part of a working horse farm. We have three dogs and my daughters also have over 20 chickens. Our property offers us more than a beautiful lawn. We have a beautiful pond for fishing and forested areas for hunting and wildlife viewing as well.

BL: What is unique or special about your property or where you live?

JT: The most unique thing about our property is the fact that even though it’s very close to the amenities of the city, it is also very secluded and quiet.

BL: Do you have any distinguished areas or favorite spaces in your backyard?

JT: Our 3-acre lake has a small dock with a park bench on it. The bench faces west, which provides some of the most beautiful sunsets you’ve ever seen!

BL: How does where you live support your love for a backyard/outdoor lifestyle?

JT: Our property is diverse, which allows us to do everything we love outdoors from swimming in our backyard pool to gardening, hunting and fishing. And, all within a stone’s throw of our home!

BL: What is the trickiest thing about maintaining your backyard/property?

JT: The two trickiest things about maintaining our property is dealing with downed trees along the perimeter of our four and a half acres of finished-cut lawn, and managing weed and cattail growth in and around our lake.

BL: What is your key to successful backyard upkeep?

JT: A consistent maintenance regiment and, without a doubt, our Exmark mower.

BL: What is your favorite backyard improvement/addition, or accomplishment/project that you’re most proud of?

JT: I’m most proud of the stamped concrete patio deck and landscaping between our home and in-ground pool that we recently added. It also features a permanent aluminum gazebo for entertaining and shelter from the elements.

BL: Can you fish or hunt on your property? Do you? What about archery?

JT: Absolutely. Fishing and bow hunting are a big part of our lives, as well as two of our favorite recreational activities on our home property.

BL: Describe your perfect backyard afternoon (or way to spend time in your backyard)?

JT: My favorite backyard afternoon would be spent grilling and target shooting my bow in the backyard. Both activities are some of my favorite ways to unwind!

BL: Favorite meal to throw on the grill?

JT: Honey curry chicken kabobs with grilled sweet potato slices.

Q&A: Rural Living Expert and Arms Family Homestead Host, Daniel Arms

Backyard Life Ambassador and expert hunter, Daniel Arms shares what life is like on the Arms family homestead. The family documents life on their 110-acre farm in rural Oklahoma on their YouTube channel Arms Family Homestead.

Backyard Life: Tell us a little about yourself—your family, where you live and what you do that relates to your love of being outdoors?

Daniel Arms: My wife, three children, and I live on a 110-acre farm in the southern Oklahoma town of Sulphur. Although I’ve been “beating the pavement” as an Oklahoma State Trooper since 2006, I grew up hunting, fishing and farming on the same plot of land we live on today.

BL: What is unique or special about your property or where you live?

DA: Our property has an amazing spring-fed creek that flows, year-round. Also, the majority of the property is wooded, which provides great whitetail deer and turkey hunting habitat.

BL: What is unique about your family homestead or rural living? What do you love about it?

DA: We love growing as much of our own food as possible. Growing vegetables and raising animals allows my family and me to know where our food comes from. That gives us a great sense of pride.

BL: What is most challenging about it?

DA: Chores don’t stop just because you have other things to do. In particular, gardens and animals require attention whether you have the “time” or not.

BL: On such a large property, how did you define the spaces you would use for backyard lifestyle and the ones you would leave wild?

DA: It’s just an evolving process. As we grow on the farm, we open up new areas for animals or gardens. What remains is where we recreate.

BL: How does where you live support your love for a backyard/outdoor lifestyle?

DA: The area in Oklahoma that we live in is very rural, so most people view our lifestyle as normal living.

BL: What is the trickiest thing about maintaining your property?

DA: Finding the time to stay ahead of so many chores. It’s a never-ending process to keep everything maintained.

BL: What is your favorite backyard addition or project that you’re the most proud of?

DA: We saved up for almost three years to build a nice big barn. I purchased all of the materials and built it over several months. It was the first big building project that I had completed on my own, which was very gratifying.

BL: Can you fish or hunt on your property? Do you?

DA: Yes, we hunt and fish on it all year long. It’s one of the main reasons we choose to live the way we do.

BL: What food do you grow/produce on your property? And, do you have any tips on keeping wildlife from eating it?

DA: We have a large greenhouse and garden, both of which are surrounded by electric fencing to keep deer from eating the variety of vegetables we grow. We also raise Kiko meat goats and a few head of cattle.

BL: What’s been the most challenging food to grow? And, why?

DA: We’ve always had a hard time growing fruit trees because of the constant challenges we face in keeping deer and goats from eating the harvests.

BL: Describe your favorite way to spend time on your property?

DA: I love spending time fishing in the creek or pond with my kids. During the summer, we spend a lot of time exploring up and down the creek, watching crawdads, minnows and whatever else we can find.

BL: What’s your favorite meal to throw on the grill or favorite meal that you’ve produced on your property?

DA: Without question, our favorite meals always include fish that we catch here on the homestead. We prepare them in a variety of ways—any of which I’m happy to share!
